2 cups all-purpose flour, plus more for kneading
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon ground turmeric
3 tablespoons grapeseed oil, plus 2 cups for frying
2 tablespoons water, plus more if needed
Mango chutney (makes 3 cups)
16 oz frozen mango, defrosted
2 tablespoons fresh mint, roughly chopped
1 tablespoon fresh basil, roughly chopped
Pinch paprika
Pinch of salt
Filling
1 medium sweet potato (about 10 ounces)
1 small gold potato (about 5 ounces)
1/2 cup fresh or frozen peas that have been defrosted
1 teaspoon ground cumin
1/2 teaspoon ground cardamom
1/4 teaspoon garam masala
1/8 teaspoon salt
