Sweet Potato/ Yam Hashbrowns

My husband and I love making breakfast together whether it be in the morning or for dinner! I had some yams lying around when I went to make breakfast for dinner (Binner?), and I had this crazy thought to make hash browns with them. They turned out really great! A side note, I cubed mine up real small but you could also just shred them which I will try next time! And I used yams but sweet potatoes would be yummy too!

1 sweet potato or yam
1 tsp vegetable oil
garlic salt
pepper
Shred or cube the yam/sweet potato. Heat oil in medium sized sauce pan on medium to high heat. Add the potato. Generously sprinkle with garlic salt and a little bit of pepper. Cover and let cook until browned and cooked through. Enjoy with pancakes and eggs!
