Bangers & Mash

For St. Patrick’s Day we did something a little different and went with some real comfort food, Bangers and Mash! The sausage is so flavorful that combined with the smooth mashed potatoes it is a fantastic combination. For traditional pub comfort food this is hard to beat!

6 large sausages or Bratwurst
2 T oil
1 large onion ( sliced thin )
2 T flour
4 c chicken broth
2 lbs. yellow potatoes ( diced )
½ c cream
¼ c sour cream

If you want to create something that will amaze your family and endear them to you forever, you have to give this a try. The pasta with chicken and shrimp, along with a creamy sauce that is packed full of flavor is a winning combination! The layers of flavor are so deep that it is a little bit of heaven right on your plate. Someone special deserves a special meal and this is one of the very best!

1 lb Penne pasta ( cooked )
12 large shrimp ( cooked and shelled )
8 oz. chicken breasts ( grilled and sliced )
2 oz. prosciutto ( chopped )
Sauce:
3 T butter
2 T garlic ( minced )
3 T Marcella cooking wine
2 c heavy cream
1 c Parmesan cheese ( grated )
½ c milk
½ c chicken broth
1 T corn starch
1 T Dijon mustard
2 tsp. fresh rosemary ( minced )
½ tsp. salt
½ tsp. fresh thyme ( minced )

Last winter my wife and I had the chance to visit New York City for a few days. One thing I really like about New York is all the great food you can purchase from the street vendors. One that I really enjoy is from the Halal trucks with delicious chicken and flavorful rice. This wonderful dish will take you right back to the corner of Broadway and 22nd, I promise!

Rice:
2 tablespoons butter
½ teaspoon turmeric
¼ teaspoon ground cumin

My family eats rice every week and we love it. I look forward to having leftover rice in the fridge because that means ham fired rice! My wife is the very best at turning plain white rice into a pallet-pleasing masterpiece. With bacon, veggies and eggs, it has a little bit of everything. It goes with so many dishes and kids love it. Next time you have leftover rice, whip up a batch – you will be glad you did.
