Bangers & Mash

For St. Patrick’s Day we did something a little different and went with some real comfort food, Bangers and Mash! The sausage is so flavorful that combined with the smooth mashed potatoes it is a fantastic combination. For traditional pub comfort food this is hard to beat!

6 large sausages or Bratwurst
2 T oil
1 large onion ( sliced thin )
2 T flour
4 c chicken broth
2 lbs. yellow potatoes ( diced )
½ c cream
¼ c sour cream
Salt and pepper to taste
Spicy brown mustard

On your camp stove, heat the oil in a 12\\\" cast iron fry pan. Poke your sausage with a tooth pick so they won\\\'t \\\"bang\\\" or split open when cooking. Brown sausages on all sides and then remove to a...

Last winter my wife and I had the chance to visit New York City for a few days. One thing I really like about New York is all the great food you can purchase from the street vendors. One that I really enjoy is from the Halal trucks with delicious chicken and flavorful rice. This wonderful dish will take you right back to the corner of Broadway and 22nd, I promise!

Chicken:
I like to use the chicken from our Indian Butter Chicken. See link below:

My family eats rice every week and we love it. I look forward to having leftover rice in the fridge because that means ham fired rice! My wife is the very best at turning plain white rice into a pallet-pleasing masterpiece. With bacon, veggies and eggs, it has a little bit of everything. It goes with so many dishes and kids love it. Next time you have leftover rice, whip up a batch – you will be glad you did.

2 cups uncooked rice ( cooked and chilled )
¼ lb. bacon ( diced, reserve oil )
2 eggs ( slightly beaten )
3 green onions ( chopped )
8 oz. frozen veggies ( peas, carrots etc )
¾ c diced ham
Dark Chinese soy sauce to taste

This can be done on a Volcano Grill or on your camp stove. Use a cast iron wok or a large, heavy cast iron fry pan. Cook diced bacon until crisp, remove an save, leaving grease. Cook egg and scramble in...
