Creamy Balsamic Chicken with Mushrooms is a one-skillet dish that's deeply satisfying and nourishing. Caramelized onions add sweetness, mushrooms add umami, and balsamic vinegar adds a sweet, slightly tangy flavor. 2 lbs boneless, skinless chicken breast
2 Tbsp olive oil
1 tsp kosher salt
1/2 tsp freshly cracked black pepper
2 Tbsp butter
6 oz onion or shallot ( thinly sliced )
8 oz button mushrooms ( sliced 1/4 inch thick )
2 cloves garlic ( minced )
1 c chicken stock
1 c heavy cream
2 Tbsp balsamic vinegar
1 Tbsp thyme ( dried or fresh )
1 c flat-leaf Italian parsley ( roughly chopped )
Salt to taste

Sharing my secret to super juicy no brine roast turkey recipe that will make you a hero of your Thanksgiving dinner. It involves a bottle of champagne and melted butter!

I love a hardy meal with meat and a flavorful sauce. This chicken really fit the bill. The balsamic vinegar really adds a wonderful flavor to the dish. Mushrooms and garlic add an earthy zest of flavor. We ate it over potatoes and it was a great meal, and all in one skillet!

1½ pounds boneless chicken breasts ( pounded to ½ inch thick )
salt and pepper to taste
2 T olive oil
8 cloves garlic ( finely chopped )
½ pound mushrooms ( sliced )
? cup balsamic vinegar
¾ cup chicken broth
1 tsp. dried thyme

Bread Stuffing

This is a fabulous side dish for so many different meals. The combination of butter and herbs is irresistible. The real secret is to toast the bread before you make the stuffing. This will go great with turkey, pork, meatloaf or chicken. You are going to simply love it!

1 (½ c) celery ( chopped )
¾ c onion ( chopped )
1 c fresh mushrooms ( chopped )
¾ c butter
9 cups bread cubes ( I use half white and wheat bread )
½ tsp. salt
½ tsp ground sage
½ tsp dried thyme
¼ teaspoon pepper
¾ to 1 c chicken broth ( as needed )
