Fresh Fruit Tart

This fresh fruit tart recipe is a showstopper on any dessert table. It has everything you're looking for in a dessert…a crumbly crust, smooth pastry cream, lightly sweet fruits, and a glaze on top to make everything sparkle in the sun.

Pastry Cream:
1-3/4 c whole milk
6 Tbsp granulated sugar
3 Tbsp cornstarch
3 large egg yolks
2 Tbsp butter
2 tsp vanilla extract
1 Tbsp flour
Sweet Tart Crust:
1-3/4 c flour
1/2 c powdered sugar
1/4 tsp salt
1/2 c butter ( melted )
1 large egg, plus 1 yolk
1/2 tsp vanilla extract
1 tsp lemon zest
Chocolate Ganache optional:
2 oz dark chocolate , 60-65% cacao ( coarsely chopped )
1/4 c heavy cream
Fruit Glaze:
1/4 c fruit jam of your choice
1 Tbsp water

Has there ever been a more perfect combination than chocolate and mint? No, there's not. Smooth rich chocolate combined with refreshing mint is just delectable…oh, and then I decided to throw in some Oreos too for the crust.

Chocolate Ganache Cheesecake:
32 oz cream cheese ( softened to room temperature )
1 c granulated sugar
10 oz bittersweet chocolate
1/4 c cocoa
1/4 tsp salt
4 large eggs
1/2 Tbsp vanilla extract
1/2 c heavy cream
Oreo Crust:
1 package Mint Oreo cookie wafers
1/2 c butter
Mint Topping:
Cream filling from package of Mint Oreos
1 c heavy cream
1/2 Tbsp vanilla extract
1/2 c granulated sugar

It's called Barchiglia and it's a chocolate-glazed almond tart with pear preserves, a traditional Easter dessert from southern Italy.

Ingredients for Pastry:
2 c flour
1/2 c sugar
1 tsp baking powder
1/4 tsp kosher salt
1/2 c cold unsalted butter, cut into pea-sized pieces
1 whole egg, plus 1 yolk
1 tsp lemon zest
Ingredients for Almond Filling:
1 c blanched almonds
3 large eggs, separated
3/4 c sugar
1/4 tsp ground cinnamon
zest of 1 lemon
pinch of kosher salt
1 c Marmellata di Pere
Ingredients for Marmellata di Pere, Pear Preserves - this makes enough to have leftovers:
3 lbs ripe pears, peeled and cored
1/4 c lemon juice
zest of 1 lemon
Ingredients for Chocolate Ganache:
1/2 c heavy cream
4 oz dark chocolate, 60 to 65% cacao - coarsely chopped
