This Easy Mexican Rice is the perfect addition to your favorite Mexican meal!

1 Tbls canola oil
1 cup long grain white rice
1/2 cup chopped onion
2 cloves garlic ( crushed )
1 1/2 cups water
1 chicken bouillon cube
1 tomato ( seeded and chopped 2 Roma tomatoes )
1 jalapeno pepper ( halved and seeded )
1 tsp ground cumin
salt and pepper to taste
