Pumpkin Cheesecake

The first time I made this pumpkin cheesecake recipe, there were no leftovers to take home...they ate it all! Guess I'll just have to make another one.

Crust:
10 oz graham crackers or gingersnaps
1-1/2 sticks unsalted butter ( melted )
Pumpkin Cheesecake Filling:
1 lb Philadelphia cream cheese ( softened )
3/4 c granulated sugar
16 oz pure pumpkin puree
2 large eggs
1 Tbsp flour
1-1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1 tsp vanilla extract
Whipped Cream :
1 c heavy cream
2 Tbsp granulated sugar
1 tsp vanilla extract

Pork Chops with Apple

Pork chops with apple is a fall classic. But we can actually make it tastier and simpler. And yes, it's a one-pot dish, ready in 30 minutes.

For the chops:
2 thick bone-in pork chops
2 Tbsp neutral oil, like canola
1/2 Tbsp kosher salt
1 tsp freshly cracked black pepper
1 tsp warm spice, such as cinnamon, allspice, etc ( optional )
For the sauce:
2 crisp apples, like Fuji ( cored and cut into 12 wedges each )
2 Tbsp unsalted butter
1 tsp rosemary ( chopped )
1 tsp sage ( chopped )
1/2 c red onion ( chopped )
2 cloves garlic ( unpeeled, crushed )
1/2 c chicken stock
2 Tbsp heavy cream
1 Tbsp Dijon mustard
Salt and pepper to taste

Pepperoni bread (aka pepperoni roll or stromboli) has always been a special treat for me. In my Italian family in southern New Jersey, we all savored pepperoni bread!This recipe makes enough dough for 2 loaves of pepperoni bread (you'll have to double the fillings though). So, my recommendation is to either double the "fillings" or save the other half of the dough to make a homemade pizza!

Pizza Dough:
1-1/4 c warm water
1 tsp granulated sugar
2 tsp instant yeast
2 Tbsp olive oil
3-1/2 c flour
1-1/4 tsp salt
Filling:
5 oz pepperoni ( sliced thin )
1 lb mozzarella cheese ( grated or cut into thin strips )
1/4 c Parmesan cheese ( grated )
1 large egg ( beaten )
2 Tbsp butter ( melted )
Your favorite Italian spices and herbs (garlic powder, oregano, basil, etc)
