A creamy and flavorful Sweet Potato Soup with Coconut Milk that is done in the Pressure Cooker with a hint of spice that is perfect for the crisp days of Fall.

2 tbsp Olive Oil
1/2 White Onion ( Chopped )
2 Carrots ( Peeled, and Chopped )
2 Sweet Potatoes ( Peeled and Chopped )
3 cloves Garlic ( Diced )
1 can Coconut Milk
1 cup Vegetable Broth
1 tsp Smoked Paprika
1/2 tsp Cinnamon
1/4 tsp Ginger
1 tsp Cumin
