Tequila Lime Cheesecake with Strawberry Margarita Topping

Creamy cheesecake on a graham cracker crust loaded with lime juice, lime zest, and tequila! Covered in a thick sauce full of fresh strawberries a dash of sugar and more tequila.

8 graham crackers
1 tablespoon granulated sugar
4 tablespoons unsalted butter, melted
3 (8 ounce) packages cream cheese, at room temperature
? cup sour cream
? cup ricotta (see note)
¾ cup granulated sugar
2 tablespoons tequila
zest + juice of 1 lime (about 1½ tablespoons fresh lime juice)
4 eggs, at room temperature
1 pound fresh strawberries, hulled and coarsely chopped
2 teaspoons cornstarch
1½ tablespoons granulated sugar
2 tablespoons tequila
2 tablespoons water
