3 and 1/2 ounces (100g) sugar snap peas, thinly sliced lengthwise
1 red and 1 yellow bell pepper, deseeded and thinly sliced
2 large carrots, shredded
1/2 cup (25g) cilantro, chopped
2 and 1/2 cups (75g) mixed baby salad greens, roughly chopped
2 tablespoons roasted peanuts, roughly chopped
!To Make the Dressing
1/3 cup peanut oil (canola works too)
A small piece of fresh ginger root, peeled
2 tablespoons soy sauce
2 tablespoons water
1 tablespoon lime juice
1 tablespoon white wine vinegar
2 tablespoons honey
1 tablespoon roasted sesame oil
1 tablespoon creamy peanut butter
1/2 teaspoon chili paste, optional
