The Best Dutch Apple Pie Recipe

Now, as I mentioned, I don't really care for pie crust. HOWEVER- if you can make the pie crust taste like a delicious buttery oatmeal/brown sugar cookie, I am totally in. And that is exactly what is going on with this recipe. :) I still love chocolate cake more than any other dessert, but this was pretty dang good! And, my dad loved it, so it was perfect.

2 cups all-purpose flour
1 cup light brown sugar ( packed )
¾ cup butter ( melted )
½ cup oats ( I used quick oats )
Filling:
3 tablespoons cornstarch
1 (¼ cups) cold water
4 apples ( diced and peeled I use Granny Smith or Golden Delicious apples )
1 (½ teaspoons) vanilla extract
2/3 cup sugar
Preheat oven to 350 degrees. In a large mixing bowl, combine flour, brown sugar, butter, and oats. Measure out 1 cup of the mixture and set aside for later; press remaining crumb mixture into a 9” ungreased...
