Three Bean Salad with Corn & Peppers

1 c. corn
1/2 red bell pepper, seeded and ribs removed, diced
1/2 orange bell pepper, seeded and ribs removed, diced
1/2 yellow bell pepper, seeded and ribs removed, diced
1 jalapeƱo, seeded and ribs removed, diced
1 c. cucumber, peeled & diced
1 (15 oz.) can pinto beans
1 (15 oz.) can black beans
1 (15 oz.) can kidney beans
1/4 c. red onion
2 tbsp. extra virgin olive oil
2 tbsp. apple cider vinegar
Juice of 1 lime
1 tsp. ground cumin
1 1/2 tsp. sea salt
1/2 tsp. black pepper
In a large bowl, mix together all ingredients. Toss well to combine. Serve immediately or refrigerate until ready to serve.
