Fluffy toasted coconut homemade marshmallows. Delicious homemade marshmallows that are gluten-free, grain free, and made without any corn syrup. These homemade marshmallows are simple to make and made with real ingredients. So much healthier for you compared to the store-bought kind, and better tasting too! Well, in my humble opinion.

1 cup cold water
3 tbsp gelatin powder
1 cup coconut sugar
1/2 to 2/3 cup honey
1/4 tsp sea salt (fine)
1 tsp vanilla
1/4 cup potato starch
2 tbsp powdered sugar (plus some for topping)
1/2 cup shredded unsweetened coconut (plus some for extra topping)
optional coconut extract 1/4 tsp
