Triple Coconut Sweet Potato Cake

A spice cake studded with coconut and sweet potato shreds! Frosted in homemade coconut whipped cream. A healthy and gorgeous cake for Easter or any other celebration!

1-1/4 cup whole wheat flour
½ cup sugar
? cup brown sugar, packed
½ teaspoon cinnamon
¼ teaspoon nutmeg
1 teaspoon baking powder
½ teaspoon baking soda
? cup coconut oil, melted (you can sub vegetable)
2 tablespoons milk (I used almond, but you can use coconut or cow’s)
4 eggs
1-1/2 cups grated sweet potato (1 small or medium)
1 (13.5 oz) can full fat coconut milk
1 tablespoon sugar
1 teaspoon vanilla
