Tropical Noodle Kugel

Very rich noodle kugel that is completely different from any other one you may have tried. Big hit at parties.

2 7 ounce package of wide egg noodles cooked and drained
7 eggs
1c sugar
1t vanilla
2 t ground cinnamon
1/4 t salt
1 qt(32 ounce) cottage cheese
1/2 c milk
1 pint( 16 ounce) sour cream
1 20 ounce can crushed pineapple drained well, save juice
1 stick butter melted
2 8 ounce package cream cheese broken into small pieces at roome temp
cornflake crumbs or crushed macadamia nuts
Preheat oven to 350. Beat eggs with sugar then add vanilla and cinnamon. Add cottage cheese, sour cream, milk and pineapple. Mix till well blended. Add cream cheese and butter. Mix well. Fold in noodles. Grease large rectangular pan or use non stick spray. Pour into pan. Scatter cornflake crumbs or macadamia nuts on top. ( highly recommend you use the nuts). It can sit in refrigerator overnight if you want. Bake 45 min or until golden brown. Variation is to add shredded coconut to taste, add in the saved pineapple juice. Taste the mix before baking to suit your tastes. Nutmeg might be good too.
