Turkey a la Sweet Potato

Leftover turkey and gravy stuff a sweet potato

4 medium sweet potatoes, cooked (I did mine in the microwave)
1 tsp. oil
¾ cup finely chopped onion
½ cup finely chopped carrots
½ cup finely chopped celery
8 oz. sliced mushrooms
1 tsp. kosher salt
¼ tsp. fresh ground black pepper
¼ tsp. poultry seasoning
½ tsp. dried thyme
1 ½ cups fat free milk
1 ½ cups low sodium chicken broth or turkey stock
3 tbsp. flour (I used whole wheat)
8 oz. cooked turkey breast or thigh, cubed
1 tsp. oil

In a large saucepan, heat oil over medium heat.
Add onion, carrot, celery, mushrooms, salt, pepper, poultry seasoning and thyme. Cook until vegetables are tender, about 7 minutes.
