Turkey and Kale Soup

This Turkey & Kale soup uses ground turkey, however I would love to make this again using turkey leftovers from Thanksgiving. I’m sure it would be just as good.

1-2 tablespoon extra virgin olive oil
3-4 Medium carrots (sliced)
1/2 Medium yellow onion (diced)
3 stalks celery (sliced)
1lb lean ground turkey
3 cloves garlic (minced)
1 can diced tomatoes (14 oz can, drained)
4 cups chicken broth
1 cup cooked rice (white or brown)
5-6 cups chopped kale
1/4 fresh parsley (chopped)
1 teaspoon oregano
salt & pepper to taste
