White Chocolate Cookie Dough Brownie Bars

So, I had a package of tea biscuits that someone had left behind on Wednesday and two recipes I’d been wanting to try. I was also tasked with making dessert for a dinner we were going to. It was the perfect storm. Check it out:

2 containers of fat free greek yoghurt
3/4 cup flour
2 tsp corn flour
1/4 tsp baking soda
1/4 tsp salt
1 tsp vanilla
3/4 cup brown sugar
1/4 cup stevia
3/4 cup flour

Heat oven to 160C. Crush cookies in food processor. Melt white chocolate. Add to food processor and pulse till combined.
Line 8×8 pan with foil. Press cookie mix onto bottom of pan.
Start mixing up your brownies: Mix dry ingredients, add yoghurt and vanilla. Dough will be thick, persist with your wooden spoon till combined. Add to pan. Bake for 25 min.
While brownies are baking, prepare the cookie dough: beat brown sugar and butter until light and fluffy. Mix in flour, powdered sugar, and salt. Slowly add cream and vanilla until fluffy.
Once brownies have mostly cooled spread frosting over the brownies. Grate white chocolate over the top, cut, and serve.
