Winter Vegetable Soup

This healthy and delicious winter vegetable soup is sure to tickle your tastebuds this festive season. It’s packed with nutrition and tastes amazing. I’ve made my own vegetable broth for this recipe, it’s super easy to do and a great way of using up vegetables. You can find the simple recipe here and use it for any veg based soup. Not only is this recipe fuss-free, it’s also great for freezing too – ideal for days when you don’t have the time to cook. I usually make a large pot and freeze for
2 sweet potatoes, diced
3 carrots, diced
1 onion, chopped
2 celery sticks, chopped
3 cloves of garlic, crushed
1 can chopped tomatoes
½ cup/85g white quinoa
1 cup/65g kale
700ml vegetable broth
1 tsp. rosemary
1 tsp. thyme
Fresh oregano
Pinch of black pepper
1 tbsp. coconut oil
3 carrots, diced
1 onion, chopped
2 celery sticks, chopped
3 cloves of garlic, crushed
1 can chopped tomatoes
½ cup/85g white quinoa
1 cup/65g kale
700ml vegetable broth
1 tsp. rosemary
1 tsp. thyme

Pinch of black pepper
