A fun and easy treat for the holidays! These truffle snowmen will become a favorite, either for your children or for your guests!

14 oz (400 grams) white chocolate
¾ cups plus plus 1 tablespoon (200 grams) cream (35% fat)
2 teaspoons vanilla
2 teaspoons brandy (optional)
A pinch of salt
1 teaspoon cinnamon (optional)
2 cups (about 200 grams) finely crashed graham crackers or butter cookies
About ½ to 1 cup shredded coconut
25 grams dark chocolate (or 1 teaspoon cocoa)
Colored sugarpaste for decoration

2 green onions

1 t lemon juice
