Yogurt Bites

These yogurt bites are easy to make and comparable to the small bags you can buy in stores. They are crunchy but also melt in your mouth.

1 - 6oz yogurt of any flavor
2T tapioca flour (optional, more dense with flour))
2 egg whites (or 1/4 C of egg whites)
1/8 tsp cream of tartar
1/4 C sugar
Parchment paper
Preheat oven to 200 degrees. Beat egg whites, sugar, and cream of tartar until peaking. Combine yogurt and tapioca flour (optional). Fold egg mixture and yogurt mixture together with minimal stirring. Put in a zip bag (with small cut out corner) or pastry bag and drop teaspoon size onto parchment paper covered cookie sheet. You can put these close together. Bake at 200 for 2-2 1/2 hours. Take out of oven and cool. Once cool take off the parchment paper and keep in an airtight container or zip bag. Makes approximately 10 1/4 cup servings. ENJOY!
