Zucchini Couscous Salad

This zucchini couscous salad is a delicious salad that tastes even better as a leftover. It is made with whole wheat couscous and grilled zucchini.

1/3 cup red onions
1 big zucchini, sliced
1 tbsp extra-virgin olive oil
Salt and pepper
1 tsp. oregano
1 cup whole wheat couscous
½ cup fresh corn
1/2 cup cherry tomatoes, cut in half
1 tsp green onion
3 tbsps feta cheese
1/3 cup vinaigrette

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
