Zucchini Latkes Fresh from the Garden

Made these and I can't get enough.....Garden zucchini with onions and cheese fried up into a crispy patty...YUM! :)

2 1/4 cups grated zucchini
1 teaspoon salt
1/2 cup grated Parmesan cheese
1/2 cup all-purpose flour
1 large egg
1 small white onion, minced
1 tablespoon parsley
1/2 teaspoon pepper
1/2 cup canola oil (for cooking)
