Zucchini Soup

Now onto my yummy zucchini Soup. I make it every year, but not for my family. My hubby doesn’t like zucchini’s and my kids wouldn’t touch it with a 10 foot pole. I don’t do a lot of soups. And with dad not eating it, I can’t see the introduction going over so well. My mom introduced it to me a few years ago,

6 Tbsp olive oli
1/4 garlic powder/salt
5 fresh zucchini
8 oz. cans tomoato sauce
16 oz. can diced peeled tomoatoes
1 Tbsp butter
1 tsp onion powder
1 lb. ground sausage
16 oz. shredded colby jack cheese
Cook ground sausage, set aside. Cut up fresh zucchini into cubes. Cook zucchini in oil, butter, garlic, onion until soft. Throw in cooked sausage, tomato sauce, diced tomoatoes, and a little water if needed. Simmer until hot. Add shredded cheese at the end just before serving. *I don’t like onions, so I use onion salt, but for the lovers, you can cook them with meat or zucchini. This is for 4-5 people, I double this for a group of 10. Very hearty and filling!
