Full of satisfying protein and healthy veggies, these "muffins" are a delicious way to keep you going throughout the day. Plus, they are a great freezer meal to keep on hand for your busiest mornings!

4 whole eggs + 4 additional egg whites
¼ cup diced onion
½ of a carrot, grated
½ of a red bell pepper, diced
½ of a small zucchini, grated
½ teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon pepper
