I am always in search of a healthy and delicious meal that my whole family (including my picky eaters) will eat and this is one of our favorites. My kids love to use the taco meat to make soft tacos on tortillas, but my wife and I stack it on a bed of lettuce and load it with vegetables to make a fresh and healthy meal.

Healthy Ground Turkey Taco Salad

Ingredients

1 pound 93% lean ground turkey
1 onion ( medium, diced )
1 Can (15 oz) pinto beans ( drained )
1 tablespoon taco seasoning ( my favorite is my easy homemade taco seasoning )
1 cup salsa
6 cups romaine lettuce ( roughly chopped into bite sized pieces )
to taste mixed vegetables ( favorite vegetable toppings (tomatoes, carrots, avocados, peppers, jalapeños, etc) )
to taste salsa ( other various taco toppings (salsa, low-fat cheese, fat-free sour cream, etc) )
