Slow Cooker Chicken & Eggplant Parmesan

This will be your cold weather go-to dish! With all the flavor but without the frying.

1 Medium yellow onion, chopped small
2 Small eggplant (cubed)
2 Medium boneless skinless chicken breasts
1 can crushed tomatoes (28 oz)
1 tablespoon Mrs. Dash Italian Seasoning
2 cloves garlic (chopped)
1/8 teaspoon black pepper
1/8 teaspoon sea salt
12oz angel hair pasta
1/4 cup reduced fat mozzarella cheese
2 tablespoons grated parmesan cheese
1 cup chopped spinach
In your slow cooker, layer the onion and eggplant. In a bowl, add the tomatoes, Italian seasoning, garlic, salt and pepper. Pour over the eggplant. Layer the chicken on top. Cook on low 4-6 hours. About...
