20 Minute Quinoa with Corn and Green Onions

This is sweet and citrusy and fluffy and a great side dish for any meal. Makes a great cold salad the next day.

1 can of corn (or 4 cobs of corn)
1 tablespoon grated fresh lemon zest
2 tablespoons fresh lemon juice
1/4 cup margarine, melted
1 tablespoon honey
1/2 teaspoon salt
1/4 teaspoon black pepper
1 ½ cups uncooked quinoa
