The perfect breakfast for busy mornings! Make the batter ahead of time and store it in a covered container in the refrigerator. It keeps fresh for 6 weeks! Then in the morning, just scoop it into a muffin pan and bake for 15 minutes while you get ready for the day. What a delicious way to get your fiber!!

1 (15 oz) box Bran Flakes cereal (or Raisin Bran cereal)
4 C buttermilk
1 C oil
3 C sugar
4 eggs
5 C flour
2 tsp salt
4 tsp baking soda

Soak the Bran Flakes in the buttermilk for 10 minutes in a large mixing bowl. Add all of the other ingredients and mix well with a large spoon. Cover with plastic wrap or transfer into an air-tight container, and store in the refrigerator.
When you're ready to use the batter, just spoon into greased muffin pans and bake for 15-18 minutes at 400 degrees. (Do NOT res-stir as used.) Keep fresh 6 weeks in the refrigerator.
HINT: Don't have buttermilk? Make your own with a little less than 4 C regular milk plus 4 TBS vinegar. Let sit 5 minutes before pouring over the Bran Flakes.
