Almond Chicken with Roasted Kale and Apple

Great twist on chicken and a side dish that made hubby a kale fan for life.

1 large bunch of kale (rinsed, stems removed and cut into 2)
2 fuji apples (cut into thin slices)
3 tablespoons olive oil (plus more for frying)
salt and pepper to taste
1/2 cup almond butter
1/3 cup 1% milk
1 tablespoon honey
4 skinlesss, boneless chicken breasts
all purpose flour (for dredging)
2 cups panko
1 large clove garlic (chopped)
2 fuji apples (cut into thin slices)
3 tablespoons olive oil (plus more for frying)
salt and pepper to taste

Preheat the oven to 425 degrees F. Toss the kale and apples on a baking sheet with 3 tablespoons olive oil and season with salt and pepper. Roast, stirring occasionally, about 20 minutes.
