Almost Makes Winter Bearable Potatoes Au Gratin Soup

Curl up with a bowl of this warm, creamy comfort soup on a cold winter day.

5-6 cups cubed potatoes
3 cups water
1 cup chopped celery
1 cup chopped carrots
1/2 cup chopped onions
2 tsp. parsley flakes
1 Tbsp chicken better than bouillon or 2 chicken bouillon cubes
1 tsp salt
dash of pepper
1 1/2 cups milk
1 1/2 cups half-n-half
4 Tbsp. flour
8 oz shredded sharp cheddar cheese
optional: cooked ham chopped in small pieces
1. Combine vegetables, water and seasonings in a large pot. 2. Cover and simmer for 20 minutes until vegetables are firm but done. 3. Blend milk, half-n-half and flour. 4. Slowly add milk mixture to vegetables until thickened. 5. Add shredded cheese until melted.
