A super easy 'cookie' with ' thin mint' taste and crunch.

8 ounces Ghiradelli dipping chocolate
1/4 teaspoon peppermint extract
8 oz package large butter crisp crackers, generic is fine
2 candy canes, crushed
Break chocolate into pieces and put in microwave safe dish. Microwave on high 30 seconds, stir; mw 30 more seconds, stir to finish melting chocolate. Do not over cook or chocolate will seize and be unusable! Stir in peppermint extract. Put wax paper or parchment on cookie sheet. Dip crackers, one at a time, in melted chocolate. Let excess drip off. Put on paper lined cookie sheet. Repeat with remaining crackers. Sprinkle crushed peppermint on top of crackers. Refrigerate to allow chocolate to set.
