Amazing Apple Muffins

The BEST apple muffins I've ever eaten. Not too sweet...you can really taste the flavor of apple. Moist with a delicious topping that sets them apart. Best eaten warm IMO :)

1 cup all purpose flour
1 cup whole-wheat pastry flour
1 tsp baking soda
1/2 tsp salt
1/2 cup packed brown sugar (or 1/2 cup xylitol + 1/2 tsp molasses)
1/4 cup canola oil (scant)
2 large eggs
1 cup natural applesauce
1 tsp vanilla extract
3/4 cup buttermilk
1 apple peeled, cored, and cut into small pieces (or grated)

Topping:
2 T brown sugar
1/4 cup chopped pecans
1/2 tsp cinnamon
Preheat oven to 400 degrees F. Coat muffin pan with cooking spray...if using liners, coat them too...otherwise half your muffin will end up on the paper! In small bowl, mix together topping ingredients, set aside. In a medium bowl, whisk together flours, soda, and salt. In large bowl, whisk sugar and oil until combined. Add eggs, whisking well after each addition. Whisk in applesauce and vanilla. Whisk in flour mixture in 2 batches, alternating with the buttermilk. Whisk until just combined. Gently stir in the apple chunks. Pour batter into prepared pan and sprinkle with the pecan topping mixture. Tap the pan on the counter a few times to remove any air bubbles. Bake for 20 minutes or until toothpick insert comes out clean. Let cool on wire rack for 15 minutes. Loosen muffins with knife, turn out onto rack and cool.
