1 medium onion, chopped
2 cloves garlic, chopped
8 eggs, beaten
1/4 teaspoon black pepper
30 ounces frozen shredded hash brown, thawed
2 cups shredded cheddar cheese
1 1/2 cups small curd cottage cheese
1 1/4 cups shredded Swiss cheese
