Delicious apple filled breakfast cakes, made with filling whole wheat flour and fresh apples.

5 c. unpeeled, cored Granny Smith apples ( or any crispy variety)
3/4 c. granulated sugar
1/3 c. canola oil
2 eggs, lightly beaten
2 tsp. vanilla extract
1 1/2 c. whole wheat flour
1 1/4 tsp baking soda
1 1/2 tsp ground cinnamon OR nutmeg
Heat oven to 350 Lightly butter or spray a 13x9 baking dish Chop apples into a large dice and toss with sugar in a large bowl, set aside Combine oil, eggs, and vanilla in a small bowl In a separate large bowl, sift together the flour, baking soda, and cinnamon or nutmeg Combine the egg and flour mixtures, mix well the slowly add to the apples Stir until well combined Spread evenly intro prepared baking dish Bake 25-30 minutes Cool before serving, cut into 12 servings
