Adding the cornstarch lowers the protein content of the flour, making it more like cake flour. If you don't have cornstarch then by all means, just add an extra 1/4 cup of all purpose flour (for a total of 2 cups) instead.

Donut:
1-3/4 C all-purpose flour
1/4 corn starch
3/4 C packed brown sugar
2 tsp baking powder
1 tsp salt
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground allspice
2 large eggs, beaten
3/4 C heavy or whipping (35%) cream
1 Tbs unsalted butter, melted
1 tsp vanilla
1 1/2 C finely chopped apples
Glaze:
2 cups powdered sugar
2 Tbs pure maple syrup
2-3 Tbs apple juice
