Apple Oat Muffins Recipe ~ Light and tender muffins filled with apples, cinnamon and oatmeal and topped with a walnut-oat streusel! The Perfect Easy, Grab and Go Breakfast for When You Are On the Go!

1 cup all purpose flour
1/2 cup white whole wheat flour
1/4 teaspoon salt
1 1/2 teaspoons ground cinnamon
1 teaspoon baking powder
1/4 cup melted coconut oil, cooled slightly
2/3 cup light brown sugar
2 eggs
3/4 cup cooked plain oatmeal (see note)
1/2 cup unsweetened applesauce
1 cup finely chopped apple (I used a Pink Lady and I left the skin on)
Walnut Oat Streusel (optional):
2 tablespoons all purpose flour
2 tablespoons old fashioned oats
2 tablespoons brown sugar
1/4 cup chopped walnuts
1/4 teaspoon ground cinnamon
2 tablespoons cold unsalted butter, cut into small pieces
