So moist and flavorful, these little snack bars get devoured as soon as I set them on the table!

½ cup melted butter
½ cup white sugar
1 cup brown sugar
½ tsp baking soda
½ tsp salt
½ tsp baking powder
2 tsp vanilla
1 tsp cinnamon
2 eggs
½ c rolled oats
1 ½ cups flour
2 medium apples, peeled and chopped
1/4 cup sliced almonds
1 ½ cup flaked coconut, divided *(I prefer the dessicated, fine grate, coconut)
