Apple Upside-Down Pumpkin Spice Cake

hen again, there’s that other favorite recipe for pumpkin spice cake, and I had all the ingredients for that one. Ultimately, I hit on the solution – this recipe! I do hope that you will enjoy this delicious cake every bit as much as my family and I did!

Cake:
canola oil cooking spray
2 tablespoons butter
1/2 cup brown sugar
2 tablespoons maple syrup
2 medium cooking apples, peeled and sliced
1-1/2 cups flour
1 cup sugar
1-1/2 teaspoons baking powder
3/4 teaspoon baking soda
pinch salt
1-1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves
3 slightly beaten egg whites
15-ounce can pumpkin
1/2 cup low-fat yogurt
3/8 cup water
1/2 cup raisins

Orange Cream Cheese Frosting:
4 ounces light cream cheese, softened
1 orange zested, plus 2 tablespoons juice
1 cup powdered sugar
