Applesauce Breakfast Cake

My kids LOVE this recipe. They don't even know that it's healthy inside. It's a moist coffee cake with a delicious crumb topping.

1 cup wheat flour
1 cup white flour
1/2 cup sugar
1 T baking powder
1/2 tsp. salt
2 eggs
1/4 cup vegetable oil
3/4 cup milk
1 cup applesauce

TOPPING INGREDIENTS:
1/3 cup all-purpose flour
1/3 cup brown sugar
1/4 cup softened butter
1 tsp. cinnamon
1. In a large mixing bowl, combine flour, sugar, baking powder, and salt. 2. In another bowl, beat eggs until frothy. Mix in oil and milk. Add the applesauce. 3. Pour the wet mixture into the dry ingredients and stir. 4. Pour batter into a greased 8- or 9- inch square baking pan. 5. Mix topping ingredients together into a course crumb topping and sprinkle over the batter. 6. Bake at 350 degrees for 50-60 minutes, until the cake tests done in the middle. Cover the cake with foil if the top starts to brown too quickly. 7. Serve!
