Apricot Chicken Chickpea Tagine

Travel to Morocco for dinner with my braised chicken thighs with apricot, olives and chickpeas

4 chicken thighs bone-in, skin removed
6 garlic cloves, minced
1 tbsp. fresh grated ginger
1 tsp. ground cinnamon
1/2 tsp. turmeric
1/4 tsp. nutmeg
1 tsp. kosher salt
1 tsp. olive oil
1 tbsp. light butter
2 cups sweet onion, thinly sliced
1 (15.5 oz) can chickpeas, rinsed and drained
1/3 cup dried apricots
1 tbsp. honey
1 (14.5 oz) can diced tomatoes in juice
12 pitted green olives

Relish:
1 cup thinly sliced sweet onion
2 chopped roma tomatoes
1 tsp. honey
2 tsp. good quality extra virgin olive oil
1 tbsp. lemon juice
1/2 tsp. kosher salt
1/2 tsp. cinnamon
1/4 cup cilantro, chopped
Zest of 1 lemon
In a small bowl, mix together garlic, ginger, cinnamon, turmeric, nutmeg and salt. Place chicken in a small baking dish and rub with garlic mixture. Cover and refrigerate for at least 2 hours but...
