Arugula, goat cheese and green apple salad

This salad has a little bit of everything. It has green leafy vegetables, it has fruits, nuts and some cheese. A dressing of olive oil, balsamic vinegar and a little honey helps in binding all of these great flavors together.

For the salad:
1 large granny smith apple
2 cups chopped arugula
2 cups chopped lettuce
¼ cup (or more) chopped scallions/green onions or chives
¼ cup raisins
½ cup chopped walnuts
1 cup chopped/crumbled goat cheese like chèvre (or feta cheese if you can’t find)
