If you are looking for a perfect summer salad, look no more. This Arugula Watermelon Salad has everything you need!

For the salad:

4 cups baby arugula
3 cups seedless watermelon, cubed
¼ red onion, thinly sliced
½ cup feta cheese, crumbled
2 tbsp mint, chopped
¼ cup pistachios, unsalted
12 kalamata olives, cut in half

For the reduced balsamic vinaigrette:

? cup balsamic vinegar
1 small garlic clove, crushed
1 Tablespoons extra virgin olive oil
salt and pepper, to taste
