Asian Beef Noodle Soup

This is my Asian inspired beef noodle soup that resembles Vietnamese Pho. The great thing about this soup is it tastes like it was cooked for hours when actually it only took around 30 minutes to prepare.

16 cups water
1 Tbs coconut oil
1lb beef shank, cubed
2 medium golden potatoes
1 small onion, sliced
5 Tbs dashida soup bullion
1 inch fresh ginger, sliced
5 cloves garlic, sliced
1/4 cup baby portabella mushrooms, sliced
1 Tbs white sugar
1 Tbs fish sauce
salt
black pepper
1/4 pound thin rice noodles
