My most favorite potatoes from childhood!!! And to make them even better they are super easy to make!

2 pounds frozen hash brown potatoes (cubed kind)
1 cup diced yellow onion
1 can cream of chicken soup
16 ounces light sour cream
1/4 cup melted butter
8 ounces sharp cheddar cheese, shredded
1/4 teaspoon black pepper

Preheat oven to 375°F. Lightly grease bottom and sides of a 9x13 baking dish.
In a large bowl combine all ingredients and place in prepared baking dish. Bake, uncovered, for 1 1/2 hours.
