Awesome soup, pretty easy to put together and makes enough to have left-overs!

1 pound ground beef
1 cup onion, chopped
4 cups hot water
1 cup each; carrots, celery, and potatoes - cut up
1/2 - 1 tsp salt
1/2 tsp pepper
1 beef bouillon cube
1 bay leaf, crumbled
1 pinch of basil
6 whole tomatoes or 1 large can tomatoes - pureed in the blender
1 cup onion, chopped

1 cup each; carrots, celery, and potatoes - cut up
1/2 - 1 tsp salt
1/2 tsp pepper
1 beef bouillon cube
1 bay leaf, crumbled
1 pinch of basil
6 whole tomatoes or 1 large can tomatoes - pureed in the blender
Brown beef and onion in a heavy kettle. Add water, carrots, celery, potatoes, and seasonings. Mix thoroughly. Bring to a boil, cover, simmer for 20 minutes. Add tomatoes, cover and simmer 10 minutes longer. Add one cup of rice or noodles when the tomatoes are added for extra flavor.
