If you’ve wanted to try quinoa but weren’t so sure about it, these quinoa cups are a great way to ease into it. They’re also very kid-friendly, and they could easily be made in mini muffin tins and served as appetizers. My.son.ate.these! Not only did he eat it, but he had a second quinoa cup. 1 c. dry quinoa
1 (15 oz.) can chicken broth
3 eggs
1 c. shredded cheddar cheese
1/2 c. cooked and crumbled bacon (8 slices center-cut)
3/4 c. chopped tomatoes
2 T. grated parmesan cheese
salt & pepper
