Bacon Cheddar Pancakes

Tastes from childhood adapted to pancake form

8 slices bacon
1 cup cheddar cheese, shredded
Pancake batter - 1.5 cups AP flour
3.5 tsp baking powder
1 tsp salt
1 tbsp sugar
1.25 cup milk
1 egg
3 tbsp melted butter
1. Mix all pancake batter ingredients (flour onward) together. Lumps will cook out. 2. Heat non-stick pan to medium and cook bacon until crispy. Remove from pan. 3. Add 1/4 cup pancake batter to pan. 4. Press 2 bacon halves into batter. Sprinkle small amount of cheese of batter. 5. Once bubbles are formed throughout pancake, flip and cook for 60 seconds on other side. 6. Repeat until all bacon is used. 7. Served with butter and syrup.
