Bacon Pot Roast

The simple addition of bacon to a pot roast sends the flavor level out of this world!

2 onions, cut in thick slices
2-3 pound boneless beef roast
1/2 pound bacon, chopped
pepper to taste
Put roast in a Dutch oven. Cover with onions and bacon. Sprinkle with pepper. Put on lid, bake at 300 degrees F until internal temperature reaches 150 degrees. Let sit on counter 20 minutes before slicing.
