Quinoa is an awesome grain packed full of nutritious goodness. For this, I was looking for a side dish to my Mango Shrimp. Hubby is always asking "Can you add bacon to that?" so I did. He devoured it!

1/3 cup slivered almonds
1 clove garlic, chopped
2 teaspoons coconut oil, divided
4 slices bacon cut into 1/4-inch dice
1 small shallot, sliced
1 cup quinoa, rinsed
2 cups chicken stock
1/4 tsp sage
1 tablespoon chopped parsley
Salt and freshly ground white pepper
1 clove garlic, chopped
